Lamb kebab

Ingredients:

  • 1 ½ lbs (700g) lamb shoulder or leg, cut into 1-inch cubes
  • 1 small onion, finely grated or minced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp ground paprika
  • ½ tsp ground cinnamon
  • ½ tsp ground black pepper
  • ½ tsp salt
  • 1 tbsp fresh parsley, chopped (optional)
  • 1 tbsp fresh mint, chopped (optional)

Instructions:

Step 1: Marinate the lamb

  1. Prepare the marinade: In a large bowl, combine the onion, garlic, olive oil, lemon juice, cumin, coriander, paprika, cinnamon, black pepper, salt, parsley, and mint (if using).
  2. Add the lamb: Toss the lamb cubes in the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 1 hour, or preferably overnight for best flavor.

Step 2: Skewer the lamb

  1. Soak wooden skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
